Certified Wife Cooked: Pork Menudo

I am certified wife for almost 1 month and counting, since we’re all alone in our new home I need to prepare not only our breakfast and baon but also our meal for dinner. We went to grocery last Sunday and listed our meals for the week; priority on our list is the pork menudo.  Waahhh!!! Di pa ko nakakapagluto ng menudo sa buong buhay ko.. Haha. But since being a wife means to grant your husband’s request as long as you live, I prepare myself for this another challenge. I searched for the ingredients and procedure for the pork menudo, I read it not only once but thrice, I even printed a copy and post it in our kitchen para may guide ako. Haha.

We file for sick leave today. Yes! In sickness and in health walang iwanan, halos sabay kaming sumakit ang tyan eh. Huhu. That’s why we prefer to stay at home, relax and of course home-made food trip. Anyway, sharing with you my simple recipe for pork menudo.

The ingredients you will need: (This is good for 2 -3 persons)



¼   kilo of pork, menudo cut (small cubes)
2 packs of tomato paste
1 medium-sized onions, minced
1 medium-sized red bell pepper, minced
1 cloves garlic, minced
1 large potatoes, peeled and diced
2 medium-sized carrots, peeled and diced
5 pcs tender juicy hotdog, diced
½ cup of raisins (optional)
1 pork bouillon cube (knorr)
2 small can of Reno liver spread
Salt and pepper


Procedures:


1. Heat your work or big pan. Just make sure it’s hot before you put oil. Fry the potatoes until light brown. Set aside. 




2. On the same pan, add more oil. Add the pork, garlic, tomato paste, onions and bell peppers. Season with salt, pepper and knorr pork cube. Reduce to low heat. Juices will eventually come out from the vegetables so no need to add water. Cover while stirring occasionally. Simmer until pork is tender or until the liquid has almost dried up leaving a thick sauce.



3. Add Reno liver spread, hot dogs, carrots and potatoes, cover for about 5 minutes. Simmer for 15 or more minutes while stirring occasionally.



4. Serve with rice.
